Caribbean Pumpkin sometimes called Calabasas is a staple vegetable in the Caribbean and is used in the making of Breads, Snacks Desserts, Soups, Stews and other native Caribbean Dishes. Calabasas pumpkins is slightly greenish yellow some almost dark green to almost black in color and does not resemble the bright yellow fall pumpkin found in most USA markets. The color and texture of the flesh is bright yellow / orange with a creamy buttery like flavor and texture.
Caribbean Pumpkin Fritters with Mango Cream Cheese Spread
1 Cup cooked mashed pumpkin ( Can also used caned firm pumpkin)
1/3 Cup Sugar
1 egg
¼ Cup milk
1 teaspoon Vanilla extract
1 ¼ Cup All purpose Flour
1 teaspoon Baking powder
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 teaspoon ground ginger
Oil for frying
In a Medium bowl add mashed pumpkin, sugar, egg , milk, and vanilla extract. Mix until thoroughly combined. Sift the Flour, baking powder, cinnamon, nutmeg, ginger, together and fold into the pumpkin mixture. Set aside for 5 minutes. Heat the oil in a large skillet over medium high heat and using a large spoon fry the fritters on both sides until golden and cooked through ( about 10-12 minutes) adjust heat to prevent burning. Remove from heat and place on paper towels to drain. Serve warm with Mango cream cheese spread.
Mango Cream cheese Spread
½ Cup of Very ripe mangoes chopped
1 Cup of softened cream cheese
¼ Cup powdered Sugar
1 Tablespoon white Rum
Mix the Cream cheese with the powdered sugar add the rum and lightly beat until soft and combined, Fold in the mango, mix together lightly. Chill until ready to serve.
Black Bean Pumpkin Burgers with Avocado Curry Spread
1 (12) oz Tin of Black Beans Rinsed and drained
1 Cup Roasted Pumpkin roughly chopped
2 Tablespoon Chopped Onions
½ Teaspoon Chopped Hot peppers
2 Tablespoon Chopped cilantro
1 tablespoon Ground Cumin
1 teaspoon garlic powder
Salt and pepper to taste
For Garnish (Pita Bread or Hamburger Buns, Lettuce Leaves, Sliced Tomatoes, Sliced Avocado)
In A medium bowl place Black Beans, Slightly mash with a masher or fork, Leaving some of the beans whole. Add the pumpkin, onions, hot peppers, cilantro, and spices fold together to combine all ingredients. Form into patties and lay on a plastic covered dish. Place in the chiller and chill until burgers are firm ( Can be done over- night) Heat a smooth griddle pan over medium heat until hot lightly spray with non stick cooking spray. Place burgers on hot griddle pan and cook on both sides until done ( about 10-15 Minutes) Adjust heat while cooking.
Remove Burgers from heat and assemble with garnish on a plate serve with Curry Avocado cream
Curry Avocado Cream
½ Small avocado
2 Teaspoon Curry Powder
¼ Cup Ranch Dressing or Mayonnaise
Salt and pepper (optional)
In a small bowl Mash the Avocado with the Curry powder into a chunky paste. Add the ranch Dressing mix together, Season with salt and pepper, chill until ready to serve
