Springtime Cooking for Two " Steamed Asparagus with Shrimp and Curry Fruit Relish



 
  One of the question and concerns I get when hosting cooking classes is how can I reduce the recipe for two people? As We get older and with kids leaving home we are sometimes left with the dilemma of having to cook now for only two people. Being empty nesters should be a fun time especially since you both now have the freedom of enjoying and spending time with each other and what better place to do that but in the kitchen. As the weather warms up this is a great time now to bring out the pots and pan and have fun in the kitchen by preparing great, delicious and fun dishes for just the two of you. without excess waste or boredom. 
    Years ago I took care of a aging couple the wife was diagnosed with cancer for the second time, Every day I will come in and prepare the meals which included 3 courses they never missed a meal, she never eat in her room, I always set the table with all the trimmings. They sat together every day enjoying the meals while chatting, sharing stories and laughing. she lived for years after well into her 80's. I share this story to let you know that two can be great company,

Steamed Asparagus with Shrimp and Fruit Curry Relish
8 ounces Asparagus spears (about 1/2 bundle) Most supermarket will break packages
1 tablespoon butter
2 tablespoon chopped onions
1 garlic cloves peeled and chopped
1/4 cup golden pineapple cut into medium dice or ( can chunked pineapple)
1/4 cup diced peeled Apple
1/4 cup diced fresh mangoes
1/4 grated fresh ginger
½ tablespoon curry powder
¼ cup coconut milk
¼ chicken stock or pineapple juice
8 ounces medium peeled and deveined fresh shrimp
Salt and pepper to taste
Steam Asparagus in a pot of salted boiling water for 5-10 minutes do not over cook. Remove Asparagus from pan and plunge in a cold water bath to stop cooking and set aside
Make curry relish by melting butter in a medium pan add, onions, garlic, pineapples,mango, apple, ginger and saute for 5 minutes. Add Curry powder and cook for another 2 minutes add the coconut milk,chicken stock and shrimp simmer for another 5-10 minutes until relish is thickened and shrimp is cooked ( should turn pink) do not over cook season with salt and pepper serve with steamed asparagus
For Lunch or a light spring dinner I serve this with Caribbean Cassava (Yucca) Cake or Mediterranean Flat Bread Serves 2
